To prepare these fresh salads, we always start by boiling the rice, which must be seasoned with a drizzle of extra virgin olive oil and left to cool before being mixed with the condiments.

The quality of the rice to use will depend only on personal taste: for salads, parboiled is ideal, but red, yellow, Venere or Basmati rice are also fine.

Nicoise rice salad

Fresh but very nutritious, it is a real single dish, very easy to prepare. It includes the same ingredients as the famous Salade Niçoise, the vegetable salad originally from the Côte d'Azur, with the addition of yellow Ribe rice: then, boiled and chopped potatoes and green beans, hard-boiled eggs, well-drained tuna in oil, olives sliced ​​black and cherry tomatoes, all scented with a few leaves of fresh basil.

A tip: if we prepare the salad the day before to consume it on the beach the next day, add the boiled potatoes just before leaving the house, to prevent them from losing freshness and flavor by staying together with the other ingredients for a long time.

Venus rice salad with tuna and red peppers

A unique and captivating appearance and a flavor that is no exception, thanks to the combination of red peppers with tuna and the freshness of mozzarella.

A rice salad that can be enjoyed cold or warm and also lends itself to some variations: the peppers can be quickly sautéed in a pan, or added raw; we can season the rice with garlic or basil flavored oil and the mozzarella can be replaced with cubes of feta or vegetable cheese.

Cold rice with courgettes, eggs and ham

Perfect to be enjoyed by the sea, it is a delicious, light and nutritious dish. Just sauté the diced courgettes for 5 minutes in a pan with extra virgin olive oil and a clove of unpeeled garlic and then add cubes of cooked ham.

Separately, beat the eggs with a pinch of salt and a few tablespoons of grated Parmesan cheese and pour them into the same pan where we browned the courgettes, letting them cook until they have set.

Then crumble the egg "omelette" with the help of a spatula, add the zucchini and ham and leave to flavor for a few minutes, before turning off the heat. When the sauce has cooled, pour it over the rice and complete, as desired, with cubes of scamorza or mozzarella.

Peel the avocado, cut the pulp into cubes and season it with lemon juice and a little extra virgin olive oil.

Let's assemble our exotic salad by adding the boiled shrimp, avocado and diced fruit to the rice; finally, we mix and season with salt. The only trick: do not prepare this salad too early, to prevent the fruit from releasing liquids or oxidizing on the surface.
