You need to heat a non-stick pan, cook the pepper, aubergine, courgette and onion in order. Sprinkling with extra virgin olive oil and a few tablespoons of water.

When the vegetables are wilted to the right point, combine everything in a bowl and season with basil. Apart from cooking spelled or barley like pasta, boiling the water and then keeping them on the stove for 5/10 minutes (depending on the type). Remove the water and pour into the vegetables. Turn everything with a fork in order to separate everything well without breaking it. Season, to taste, with a stringy cheese.

Peppers stuffed with vegetables

A tasty recipe is that of stuffed peppers which, if heated at the moment, will have an idyllic flavor. You need 1 pepper each, 150 grams of diced vegetables, 50 grams of mature cheese, 50 grams of Parmesan, onion, salt, pepper. The first thing to do is to brown the onion with extra virgin olive oil. Then add the minced meat making sure that it is well filleted and does not make lumps.

Apart from taking a pepper, clean it inside by removing all traces and seeds, wash it thoroughly. When the meat is ready, add some mature cheese and mix, season with salt and pepper and let it cool. Fill the pepper with the previously blanched diced vegetables, pushing the mixture well inside, cover with grated Parmesan cheese and cook for 50 minutes at 180 degrees.

Boiled courgettes with onion

A valid alternative for those on a diet to the classic grilled zucchini, are those boiled with onion that take on a noteworthy taste, albeit very light. They are easy to prepare, you just need 1 courgette, 1 onion, extra virgin olive oil, salt. Put the onion, oil, diced courgettes, water in a saucepan and boil everything.
