Flour is in fact one of the most used historical products in Italian cuisine. It is a fundamental ingredient for making bread / pizza, sweet and savory baked goods. Owning and using the right flour can make the difference in any preparation, at home or in a restaurant / pizzeria / pastry shop.

Flours are not all the same, and the best yield is obtained when they are used for specific preparations.

The two major classifications are soft wheat flour and durum wheat flour.

Soft wheat lends itself very well to bread making, in fact it gives the pizza a lot of stability, while making everything quite delicate. It does not have a particular taste but it is an important base on which to then insert the various ingredients. However, this is the cereal with the greatest amount of gluten. Durum wheat flour is known as semolina because it is particularly grainy, coarse, has an excellent hold but is less "extendable" than soft wheat and therefore mainly used for pasta rather than pizza.

Olive OIL ... to each type its use in the kitchen ...

Olive oil is the "juice" obtained by squeezing the fruit of the olive tree (Olea europaea), using mechanical and physical processes under controlled thermal conditions. The European Community classifies olive oil on the basis of three substantial elements: type of extraction to obtain the oil, composition and organoleptic analysis (smell, taste, color, consistency).

Here is a brief classification:

Extra virgin olive oil -> acidity must not exceed 0.8%

Virgin olive oil -> acidity must not exceed 2%

Lampante virgin olive oil -> acidity above 2%

Olive oil obtained from the mixture of refined olive oil and virgin olive oil (other than lampante) -> acidity must not exceed 2%

Olive pomace oil obtained from the mixture of refined olive pomace oil and virgin olive oil (other than lampante9 -> acidity must not exceed 1%

San Marzano tomato

The San Marzano tomato stands out for its cylindrical and elongated shape with a length from 60 to 80 mm. The tomato has a bright red color, the pulp is elastic, a little watery and almost seedless, a thin skin that easily detaches from the pulp .. The flavor is typically sweet and sour, fresh and intense, a true excellence that lends itself to hundreds of gastronomic preparations.
