Especially on weekends or on holidays, when it is easier to find time to devote to home cooking, preparing bread in our kitchen allows us to bring to the table a fresh and tasty product, which can be declined as desired in shape and flavor.

Homemade bread: variants

Making bread is a pleasant activity, which gives satisfaction and allows you to taste the "main" food of our tables in a thousand different ways: white, wholemeal, stuffed with dried tomatoes, with cheese, or with green or black olives ... it will be enough to follow our tastes, or let us be inspired by the desire of the moment, to enrich a product that is already delicious in itself.

Once baked, the olive bread accompanies an inviting platter of cold cuts and cheeses, enriches the taste of a salad, can be stuffed to taste or simply eaten alone: ​​the flavor and consistency of the olives, in fact, give the bread a special flavor and fragrance, which make it truly irresistible.

Bread with olives: recipe

Perfect for any occasion, olive bread has an uncomplicated and fairly fast preparation, even more so if you use the planetary mixer, a precious tool that blends perfectly - and independently - all the ingredients.

Let's start by inserting 500 grams of flour into the bowl of the mixer (of which 200 grams of re-milled semolina and 300 of flour 0), on which we will pour 5 grams of fresh brewer's yeast, previously dissolved in a little water at room temperature, to which we will add ½ teaspoon of sugar.

Using the leaf hook (suitable for processing more consistent compounds), we start the planetary mixer and start kneading.

Little by little, we combine 300 ml of warm water: dividing this activity into 4 steps at a distance of 2 minutes from each other, will allow the machine to perfectly incorporate the liquid into the flour and make a smooth, elastic and well-strung dough.

Then add 4 tablespoons of extra virgin olive oil and let the mixer work for another 2 minutes.

Let the dough rise in the same bowl as the planetary mixer, covered with a clean cloth and placed in a place sheltered from drafts.

After the resting time (about 2 hours), add 15 grams of salt and 100 grams of pitted olives (green, black or mixed) to the mixture, then restart the mixer for about 7/8 minutes.

We turn on the oven and bring it to the optimal temperature (200 ° C with ventilated mode or 210 ° C with the static one); in the meantime, place the olive bread dough in an oiled pan or covered with baking paper, giving it the shape of a loaf or loaf.

We place the pan on the central shelf of the oven and, after about 50 minutes of cooking (without ever opening the door!), Our olive bread will be ready to be enjoyed.

Tips for getting the best homemade olive bread

If we want to obtain an even softer and well-alveolated bread, once the leavening has taken place, we can take the dough from the bowl and give it some "reinforcement folds" by hand, directly on the pastry board.

To do this, spread the mixture and tuck it "in wallet" on itself, repeating the operation two or three times, letting the dough rest for 10 minutes at each step.

All in all, therefore, making bread in the kitchen at home is a simple activity that gives great satisfaction: if we then use an "ad hoc" tool, such as the planetary mixer, we will shorten the preparation time and the work will be considerably facilitated.

In fact, it will be enough to dose the necessary ingredients and pour them into the bowl because the machine blends them perfectly, always achieving an optimal result.
