Start by chopping a few leaves of basil, parsley and mint and mix the herbs with two tablespoons of breadcrumbs, a few desalted capers and four / five pitted black olives. In a non-stick pan, sauté a clove of garlic together with the capers and olives in EVO oil, add the chopped herbs and a handful of pine nuts and cook for 5 minutes. Cook the spaghetti, drain while still al dente and toss in a pan with the herb dressing, completing the preparation with a drizzle of raw oil.

Short pasta with courgette flowers and ham

To prepare this exquisite and delicate first course , you can use your favorite short pasta, for example, penne, celery rigati or tortiglioni.

Wash and dry the courgette flowers and remove the pistil, then cut them into four parts. Finely chop a shallot and brown it in a pan with EVO oil, add diced cooked ham and blend with white wine; now add the courgette flowers, season with salt and, if you like, complete with a sprinkling of black pepper.

While the pasta is cooking, mix ricotta and a pinch of saffron in a bowl, adding a few tablespoons of the pasta cooking water, to obtain a smooth and creamy consistency. Drain the pasta al dente and sauté it for a few minutes in a pan with the ricotta cream and the courgette flower and ham sauce.
