The management of the disease basically consists in adopting a gluten-free diet and, today, to meet this need, the availability on the market of foods for celiacs is very wide. There is no reason, therefore, why those with this kind of intolerance cannot enjoy a good pizza, especially if they decide to prepare it in their home kitchen. Just make the dough using one of the alternative flours to wheat, such as rice flour and cornstarch, or buy a ready-made mix of gluten-free flours, which can be recognized because there is a "barred ear" on the package.

How to make a gluten-free pizza

The preparation of a "gluten free" pizza is identical to that of normal pizzas made with wheat flour, but obviously the composition of some ingredients changes. The recipe we suggest allows you to make a "Margherita" pizza with a round shape and standard sizes (30/32 cm), fragrant and light thanks to the presence of rice flour.

Ingredients

Rice flour 180 g

Maizena (corn starch) 120 g

Warm water 180 ml

Fresh brewer's yeast 12 g

Salt up to 5 g

EVO oil 10 ml + 5 ml to grease the pan

Method

Start by sieving the two flours and forming the "fountain" on the pastry board; pour the crumbled yeast dissolved in a little warm water in the center and start kneading. Alternatively, you can start preparing the pizza base inside the mixer bowl and work with the leaf hook for 4/5 minutes.

Add the salt and oil and continue to knead by hand on the work surface, until you get a soft and homogeneous consistency; give the dough a spherical shape and let it rise, inside a floured container, in a warm and dark place until it has doubled in volume (it will take about 3 hours).

After the time necessary for correct leavening, take the dough from the container, knead it for a few minutes on a pastry board and roll it out on a low-sided pan, lightly greased with oil.

Spread over the surface of the pizza 150 ml of tomato sauce seasoned with oil and fine salt and put it to bake in a very hot oven (250 ° C) for about 10 minutes. Remove the pizza, toss with 200 g of thinly sliced ​​mozzarella and bake the pizza again for another 5 minutes.

When cooked, sprinkle the surface of the pizza with a drizzle of extra virgin olive oil and garnish, as desired, with a sprinkling of oregano or a few leaves of fresh basil.

Focus on the ingredients: some precautions to keep in mind

Not only rice and corn flour: other alternatives to wheat flour are also available on the market, such as soy, chestnut or buckwheat flour; in some cases you can buy a ready-made mix of special flours that contain thickening substances to facilitate leavening and obviate the lack of gluten, ensuring the gluten-free pizza a taste and aroma very similar to the classic one.

During the mixing phase, to obtain a sufficiently soft base, simply increase the dose of water or add 2/3 grams of Xanthan gum, a powdered starch of natural origin, which favors the creation of a dense and elastic consistency. pasta.
