The ingredients of the Friulian Frico Pizza

Frico Friulano pizza is a typical preparation that requires three main ingredients: Frico aged at 6 months, 12 months and 18 months.

In fact, a grated mix of these cheeses must be made in the following proportions: Dop 6 months 300 grams, Dop 12 months 100 grams, Dop 18 months 50 grams. You also need a clove of garlic, onion, butter and pepper.

Frico, as it is possible to understand, is the essential part of the recipe and therefore must be of excellent quality. This cheese is famous for being type in Friuli and has many different maturations to choose from. It is a perfect artisan product in combination with onions and butter (lard can be used as an alternative but the recipe is thus fatter even if softer).

Frico is not eaten raw but is always cooked and is known as "Montasio". This is the variant to buy for making pizza because it's just cheese. The cheese has a protected designation of origin (D.O.P.), to choose the best one it is necessary to rely on the Consortium which places its trademark only on actually local products. The name derives from the plateau of the same name in fact this cheese has been produced since 1200 and is therefore a true institution. A cooperative has been created since 1880 to support the authentic production of cheese.

For an original recipe it is necessary to use the cheese coming from Friuli Venezia Giulia or from the province of Treviso which are the authentic and recognized ones. There are also other producers in Udine, Pordenone, Gorizia, Belluno, Padua and Venice. The product label in this case is essential because it allows you to understand that it is the original one. Basing the recipe exclusively on a few ingredients, it is necessary to verify that they are those suitable for the preparation of the pizza.

How to prepare Friulian Frico Pizza

- First you need to grate all the cheeses but separately, then turn on the fire at a light power and, in a lightly greased non-stick pan, insert the cheese starting from the least seasoned to the most seasoned one.

- Gradually a sort of crust will form. In the meantime, slice the onion and brown it in butter in a pan, using a clove of unpeeled garlic and a little pepper.

- Cook for about 5 minutes. At that point lift the cheese disc, place it on a baking sheet, insert the onion and cook in the oven for a couple of minutes. For a lighter solution, you can lay all the cheeses and a drizzle of extra virgin olive oil in a round baking pan so as to form the crispy disc directly during cooking in the oven, avoiding the butter and the pan. For those who want less crunchiness, it is possible to use the structure as an alternative to butter. This variant is also fatter but certainly very welcome.
