Lunch at work: savings and taste

The combination of well-being, pleasantness and sustainability of the food we eat represents the paradigm on which all modern diets are based: not only at the table, but also outside the home, we can respect these three criteria and transport the dishes safely, using the right tools to contain them.

The pasta omelette, for example, is a tasty and cheap dish, which we can also prepare with leftover pasta from the day before, making it even more appetizing by adding other ingredients and simply browning it in a pan for a few minutes.

Fast and full of flavour, the pasta omelette is perfect to take to the office and to consume during the lunch break, because it is also a complete meal from a nutritional point of view.

The pasta omelette: recipe

In the version that refers to its Neapolitan origin, the pasta omelette is prepared with spaghetti and a few other genuine ingredients: obviously, it is a dish that we can also decide to cook "from scratch", even if very often its base it is made up of previously cooked and leftover pasta.

To prepare about 4 portions of this delicious single dish we will need:

  • 320 g of spaghetti (or bucatini)
  • 4 very fresh eggs
  • 180 g of scamorza (or other fresh cheese)
  • 50 g of grated cheese
  • oil, salt and (to taste) black pepper to taste

After cooking the pasta al dente, drain it and season it with a drizzle of oil to prevent it from sticking while it cools down; then, in a large bowl, beat the eggs together with the grated cheese, salt and, if desired, add the freshly ground black pepper.

Pour the spaghetti into the bowl and mix them with the eggs, adding the diced scamorza cheese; lightly grease a 22 cm diameter pan, let it heat up and pour the mixture of pasta, eggs and cheese into it, leveling it well with the help of a spoon or spatula.

Cover the pan with a lid and let the pasta omelette cook until it becomes crunchy at the base, then turn it over and let it brown on the other side as well: for perfect cooking, it will take about 10 minutes on each side.

Other variations of pasta omelette

Excellent both hot and at room temperature, the pasta omelette is an extremely versatile dish because it can be prepared in many different versions, varying the pasta shape and combining your favorite ingredients.

For example, we could choose to combine a cured meat (cooked ham, bacon, mortadella or salami) into cubes, or remove the eggs and "bind" the mixture with breadcrumbs and oil.

We can make a vegetarian version, equally delicious, with the addition of a leafy vegetable (spinach, chard or scalora), or with cubes of courgettes or aubergines, quickly sautéed in a pan.

If we want to accentuate the flavor of the dish, we can add a couple of boned anchovies, or a handful of olives, white or black to taste, or desalted capers.

A very light version of the pasta omelette is the one cooked in the oven: in this case, we will add 200 ml of bechamel to the egg mixture and let our preparation cook in a preheated static oven at 200 °C (or ventilated at 180 °C): we it will take about 20 minutes for a golden and crunchy crust to form on the surface, which will make the pasta omelette even more delicious.

The pasta omelette is a single dish that can be easily portioned and, therefore, ideal to take with you to the office, inside a handy lunchbox kit, complete with everything needed to eat meals at your desk, including cutlery.
